Prep Time 15 Mins ▪ Straining Time Up To Overnight ▪ Total Time 15 Mins - Overnight ▪ Makes 2 ½ cups

Ingredients
½ large cucumber, grated and strained
1 ½ cups plain full-fat Greek yogurt (5% Fage)
2 large garlic cloves, finely minced
3 tbsp extra virgin olive oil
1 ½ tbsp red wine vinegar
1 tsp salt
1 ½ tbsp freshly minced dill
2 tbsp fresh squeezed lemon juice
2+ tbsp water (up to ½ cup, for desired consistency)
Optional: 1 tbsp finely minced fresh mint
Instructions
Grate the cucumber and strain out as much liquid as possible using a cheesecloth. For best results, strain overnight in the fridge.
In a medium mixing bowl, combine the Greek yogurt, minced garlic, olive oil, red wine vinegar, salt, lemon juice, and 2 tbsp water.
Place the strained cucumber onto a cutting board and mince until it reaches your preferred texture. Stir the cucumber and freshly minced dill (and mint, if using) into the yogurt mixture.
Whisk everything together, adding more water (up to ½ cup) until the tzatziki reaches your desired consistency. Cover and refrigerate until ready to eat. Serve chilled with pita bread, grilled meats, or as a fresh dip!
