Hummus & Veggies Snack Box Meal Prep

Hummus & Veggies Snack Box Meal Prep

Ingredients

For the Hummus

  • 1 cup hummus (store-bought or homemade, see below for recipe)

  • 1 tbsp extra virgin olive oil

  • 1/2 tsp sumac

  • 1/2 tsp paprika

Fresh sliced organic veggies for dipping

  • 1 cup sliced rainbow carrots

  • 1 red bell pepper, sliced

  • 1 cucumber, sliced

  • 1 cup broccoli florets

  • 1 cup cauliflower florets

  • Or any veggies you prefer

Homemade Hummus Recipe (If you prefer making your own homemade hummus over store-bought)

  • 1 can organic chickpeas, drained and rinsed

  • 1/4 cup tahini

  • 2 tbsp lemon juice

  • 2 cloves garlic, minced

  • 2 tbsp olive oil

  • 1/2 tsp cumin

  • 1/2 tsp salt

  • 1/4 tsp black pepper

  • Water as needed - for desired consistency

Instructions

  1. Prepare the Veggies: Wash and slice the vegetables (rainbow carrots, bell pepper, cucumber, broccoli, cauliflower, or any other veggies you enjoy).

  2. Assemble the Snack Box: In meal prep containers, arrange the sliced veggies. Scoop hummus into a small container (or divide into sections of each container if prepping multiple servings).

  3. To Make Homemade Hummus: In a food processor, combine the chickpeas, tahini, lemon juice, garlic, olive oil, cumin, salt, and pepper. Blend until smooth, adding water a little at a time until the hummus reaches your desired consistency. Transfer the hummus to a container and store in the fridge until ready to serve.

  4. Season the Hummus: Drizzle the hummus with extra virgin olive oil, then sprinkle with sumac and paprika for a burst of flavor.

  5. Store & Enjoy: Seal the containers and store in the fridge for up to 4-5 days. Enjoy these healthy, satisfying snacks throughout the week!
