Chickpea Veggie Stirfry
This Chickpea Veggie Stir-Fry is packed with a medley of organic vegetables, hearty chickpeas, and a flavorful blend of seasonings, making it a satisfying and nutritious dish. Served with brown rice or quinoa, it's a perfect plant-based meal for any occasion.

Ingredients
2 cans organic chickpeas (drained and rinsed)
1 organic bell pepper, diced
2 cups organic snap peas
1 bunch organic lacinato kale, finely chopped
1 organic red onion, sliced
3 organic carrots, sliced
3 cloves garlic, minced
1 tbsp extra virgin olive oil
1 tsp dried Italian herbs
1 tsp garlic powder
Salt and pepper to taste
1/2 tsp chili flakes (optional)
Instructions
Heat the olive oil in a large skillet or wok over medium heat. Add the garlic, red onion, and carrots, sautéing for about 5 minutes until they begin to soften.
Add the bell pepper, snap peas, and kale to the pan. Stir-fry for another 5-7 minutes, until the veggies are tender but still crisp.
Add the chickpeas, dried Italian herbs, garlic powder, salt, pepper, and chili flakes. Stir everything together and cook for another 3-5 minutes, allowing the flavors to meld.
Serve the stir-fry as a standalone meal or over a bed of cooked brown rice or quinoa.
Notes
This recipe makes 4 meals for the week. Store in airtight containers in the fridge for up to 4 days.
