Caramelized Onion & Spinach Scramble with Avocado, Turkey Sausage & Fresh Fruit
This protein-packed breakfast combines fluffy scrambled eggs with sautéed spinach, bell pepper, and caramelized red onion, served with all-natural turkey sausage, creamy avocado, and fresh fruit for a well-balanced and satisfying meal.

Ingredients
For the Scramble
- 3 organic pasture-raised eggs 
- 1/2 cup organic baby spinach 
- 1/4 cup organic diced green bell pepper 
- 1/4 cup organic red onion, thinly sliced 
- 1 tsp olive oil or grass-fed butter 
- Salt & black pepper, to taste 
For the Sides
- 2 all-natural turkey sausage links 
- 1/2 organic avocado, sliced 
- 1/2 organic Honeycrisp apple, sliced 
- 1/2 blood orange, sliced 
Instructions
- Heat 1 tsp olive oil or butter in a skillet over medium-low heat. Add sliced red onion and cook slowly, stirring occasionally, until soft and caramelized (about 5 minutes). 
- In a separate pan, cook the turkey sausage links over medium heat for 6-8 minutes, flipping occasionally until fully cooked through. 
- Add diced bell pepper and spinach to the caramelized onions and cook for 1-2 minutes until softened. 
- In a bowl, whisk the eggs with a pinch of salt and pepper, then pour them into the skillet with the veggies. Stir gently until the eggs are fully cooked but still soft and fluffy. 
- Serve the scramble alongside the cooked turkey sausage. 
- Add sliced avocado, honey crisp apple, and blood orange to the plate. Enjoy with a glass of lemon water for a refreshing touch!
