Caramelized Onion & Spinach Scramble with Avocado, Turkey Sausage & Fresh Fruit

This protein-packed breakfast combines fluffy scrambled eggs with sautéed spinach, bell pepper, and caramelized red onion, served with all-natural turkey sausage, creamy avocado, and fresh fruit for a well-balanced and satisfying meal.

Caramelized Onion & Spinach Scramble with Avocado, Turkey Sausage & Fresh Fruit

Ingredients

For the Scramble

  • 3 organic pasture-raised eggs

  • 1/2 cup organic baby spinach

  • 1/4 cup organic diced green bell pepper

  • 1/4 cup organic red onion, thinly sliced

  • 1 tsp olive oil or grass-fed butter

  • Salt & black pepper, to taste

For the Sides

  • 2 all-natural turkey sausage links

  • 1/2 organic avocado, sliced

  • 1/2 organic Honeycrisp apple, sliced

  • 1/2 blood orange, sliced

Instructions

  1. Heat 1 tsp olive oil or butter in a skillet over medium-low heat. Add sliced red onion and cook slowly, stirring occasionally, until soft and caramelized (about 5 minutes).

  2. In a separate pan, cook the turkey sausage links over medium heat for 6-8 minutes, flipping occasionally until fully cooked through.

  3. Add diced bell pepper and spinach to the caramelized onions and cook for 1-2 minutes until softened.

  4. In a bowl, whisk the eggs with a pinch of salt and pepper, then pour them into the skillet with the veggies. Stir gently until the eggs are fully cooked but still soft and fluffy.

  5. Serve the scramble alongside the cooked turkey sausage.

  6. Add sliced avocado, honey crisp apple, and blood orange to the plate. Enjoy with a glass of lemon water for a refreshing touch!
