Aged White Cheddar & Broccoli Brown Rice
This simple yet flavorful dish combines organic short-grain brown rice, sautéed organic red onions and tender broccoli florets, and the richness of grass-fed aged white cheddar for a comforting and satisfying meal. Perfect for meal prep or as a side dish.

Ingredients
2 cups cooked organic short-grain brown rice (I use Lundberg Farms)
2 cups organic broccoli florets, chopped into small bite-size pieces
1/2 cup red onions, diced
1 cup grass-fed aged white cheddar, shredded
1 tsp black pepper
Salt to taste
1 tsp garlic powder, optional
Dash of red chili flake, optional
Instructions
Prepare the short grain brown rice according to package instructions, typically about 40 minutes if cooking from scratch, or use pre-cooked rice to save time.
In a large skillet, sauté the red onions over medium heat with a little olive oil until translucent, about 5-7 minutes.
Add the chopped broccoli florets and cook for an additional 3-4 minutes until the broccoli is tender but still bright green.
Add the cooked rice to the skillet with the onions and broccoli, stirring to combine.
Stir in the shredded aged white cheddar and cook for 1-2 minutes until the cheese melts and coats the rice and veggies. Season with black pepper and salt to taste.
Serve immediately or portion into meal prep containers for later. Enjoy this hearty, cheesy, and nutrient-packed dish. This is great on its own or served alongside a protein like chicken breast.
